Porterhouse steak with avocado salsa

Ingredients

  • 2 large Porterhouse steaks at room temperature
  • ½ tablespoon vegetable oil
  • 1 clove garlic cut in half
  • 1 avocado, peeled and diced into large chunks
  • 1 small capsicum, seeded and diced
  • 8 cherry tomatoes, halved
  • ½ small red onion, finely diced
  • 2 tablespoons fresh coriander, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • sea salt and freshly ground black pepper
  • to serve
  • salad leaves
  • sour cream
  • lime wedges (optional)

Method

Heat a heavy skillet or frypan over a medium high heat and add the vegetable oil. Season the steaks generously by rubbing on both sides with the garlic clove and sprinkling sea salt and ground black pepper. When the pan is hot and beginning to smoke, carefully place the steaks in the middle of the pan. Cook for about 4 minutes, then turn and cook the other side for around 3 minutes (this is for medium rare cook, for longer if you like your steak more cooked) Remove from the pan, cover loosely in foil and rest for 5 minutes. Combine all of the ingredients for the salsa in a large bowl and carefully toss through with your hands, season to taste. Serve the hot steak with a large portion of the salsa, salad leaves, lime wedges and a little sour cream.
