Lemon, Garlic and Parmesan Roasted Asparagus

Fresh green asparagus spears gently roasted with the wonderful combination of lemon and garlic and dressed with a sprinkle of Parmesan.

  • 3 bunches asparagus
  • 2 tbsp olive oil
  • 1 lemon, zested and then sliced
  • 3 cloves garlic, sliced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tbsp Parmesan, finely grated


Preheat oven to 210C.

Line a baking tray with baking paper.

Trim asparagus to remove woody ends.

Combine olive oil, garlic, lemon zest and salt and pepper in a large bowl. Add asparagus and toss to coat well. Tip contents of bowl on to baking tray and arrange asparagus in a single layer.

Roast asparagus in oven for 15 – 20 minutes or until it is tender.

Remove from oven, place on a serving platter and sprinkle with grated Parmesan to serve.
