- 4 Ritchies Famous Lines Plain Beef shashliks
- 4 Ritchies Famous Lines Plain Chicken shashliks
- sea salt and freshly ground black pepper
- olive oil
- for the sauce
- 1 cup Greek style natural yoghurt
- 1 medium garlic clove, crushed
- ½ teaspoon ground cumin
- ½ cup fresh mint, chopped
- sea salt and freshly ground black pepper
- to serve
- 8 pita bread
Method
Preheat a grill pan, griddle or BBQ to medium high. Dip the bare sections of the wooden shashlik skewers in water to prevent them burning. Brush the shaskliks with a little olive oil to stop the meat sticking and season with salt and pepper. Place them on the grill pan and cook turning regularly until done to your liking for the beef and cooked right through for the chicken. Cover with foil and allow to rest for 3-4 minutes before serving. While the meat cooks, make the sauce. In a medium bowl combine the yoghurt, garlic, mint and cumin and season to taste with salt and pepper. Serve shashliks piping hot with yoghurt sauce, warmed pita bread and a colourful Greek style salad.
