- Ingredients:
- 1 kg pork cutlets, washed and dried, set aside in a bowl
- 1 tsp cracked black pepper
- 1 tsp salt
- 2 tbsp brown sugar
- 1 tsp sesame oil
- 4 tbsp soy sauce (light or dark soy, your choice)
- 2 tsp Lainey’s chilli oil (original, vegan, or extra hot, your preference)
- 1 tsp crushed garlic
- 3 tbsp minced lemongrass

Method
- In a large bowl, combine the pork with cracked black pepper, crushed garlic, minced lemongrass, sesame oil, soy sauce, and Lainey’s chilli oil.
- Using your hands or tongs, evenly coat the pork with the marinade mixture. Ensure that the pork is well covered. Marinate for at least 2 hours, or ideally overnight for deeper flavour.
- Preheat a hot plate or barbecue grill. Avoid overcooking the pork to prevent drying out. Continuously baste the pork with the marinade during cooking.
- Grill each side of the pork for about 3 minutes, or until cooked through but still juicy.
Serving Suggestions: Serve the marinated pork cutlets with a light garden salad or coleslaw for a refreshing contrast to the spicy flavours. Enjoy!
