Zucchini and Bacon Slice

- 3 large zucchini grated
- 1 onion chopped
- 3 rashers bacon chopped
- 20g (plus extra for greasing) Western Star Original Butter
- 1 cup tasty cheese grated
- 6 eggs lightly beaten
- 125g self raising flour
Method
STEP 1
Preheat the oven to 180°C. Grease a non-stick lamington tin and set aside
STEP 2
Melt the butter in a medium fry pan over a medium heat. Once melted, add the onion and bacon, and cook for 4-5 minutes or until the onion softens and the bacon starts to turn golden. Transfer from the pan into a medium bowl to cool
STEP 3
Pace the zucchini, cheese, flour, and eggs in a large bowl. Add the cooled onion and bacon mixture, season well with salt and pepper, and stir to combine all ingredients
STEP 4
Pour the mixture into the prepared tin, transfer into the oven, and cook for 30 minutes or until puffed and golden. Remove from the oven and allow to cool for 5 minutes
STEP 5
Cut the slice into squares and serve warm or at room temperature
