Antipasto Skewers with Creamy Artichoke Dip

These antipasto skewers are literally loaded with flavour and are ridiculously easy to make. Served with a lusciously creamy artichoke dip, they are perfect party fare. The recipe below makes enough dip to serve 8, but you can easily increase the quantity for a larger crowd. Similarly, buy the antipasto ingredients based on the number of guests you are serving.

Ingredients

  • For the Artichoke Dip
  • 300 g cream cheese
  • 280 g artichoke hearts, drained and roughly chopped
  • Juice of ½ lemon
  • ¼ tsp salt
  • ¼ tsp white pepper
  • ¼ tsp smoked paprika
  • For the Antipasto Skewers
  • Cherry heirloom tomatoes
  • Pitted green olives
  • Mozzarella balls
  • Shaved salami
  • Shaved prosciutto
  • Cucumber
  • Baby spinach leaves

Method

Add all dip ingredients to a food processor and process for 2 minutes or until the dip is smooth and creamy. Spoon dip into a serving bowl and refrigerate while you prepare the skewers.

Thread antipasto ingredients onto skewers and arrange into a circle on a serving plate, leaving room in the centre for the dip.
