Bacon Wrapped Chicken Cheese And Chive Burger
We all know EVERYTHING is better with bacon! These burgers are just bursting with flavour. Instead of cooking the bacon separately we have wrapped it round the burger patty. Yum doesn't even begin to cover it! ALL the ingredients for this recipe are now available at your local Ritchies supermarket. Find your local VIC, NSW or QLD store

- 500g chicken mince
- 4 rashers rind less streaky bacon or middle bacon with the eye cut off
- ½ cup chives, finely chopped (about 1 bunch)
- ½ cup breadcrumbs
- 1 egg, beaten
- 50g tasty cheddar cheese, grated
- sea salt and freshly ground black pepper
- spray oil olive
- To Serve
- 4 burger buns
- lettuce leaves, washed
- 2 large ripe tomatoes, sliced
- 1 medium red onion, sliced
- tomato relish
Method
In a large bowl use a large metal spoon to vigorously mix the chicken, chopped chives, egg, grated cheddar breadcrumbs and a little salt and pepper until throughly combined. Using clean hands form the mixture into 4 large flat patties, wrap each patty in a slice of bacon. Line a plate or tray with baking paper, transfer the bacon wrapped patties to the tray and cover and refrigerate until you're ready to cook them. Preheat a BBQ hot plate or a large heavy frying pan to a medium heat. Uncover the patties and spray both sides with a little olive oil. Cook for about 4 minutes on each side until golden brown and cooked right through. Serve at once in toasted buns, with tomato, lettuce red onion and your favourite tomato relish.
Tip you can make miniature versions of these delicious burgers to serve with relish as a canape.
