Tex-Mex Grilled Chicken Wraps
Here’s an easy recipe the whole family will enjoy over the weekend, or any night for that matter!

- 8 chicken tenderloins
- 1 tablespoon olive oil
- 3 tablespoons taco seasoning
- 1 teaspoon smoked paprika
- ½ lime, juiced
- 4 x 10“ flour or corn tortillas, warmed
- To serve
- shredded lettuce
- tomato diced
- avocado sliced
- salsa sauce
- jalapenos sliced nacho style (optional)
Method
- In a small bowl or plastic bag place the chicken tenderloins, oil, taco seasoning and lime juice.
- Mix to coat chicken well. Place the chicken onto the grill plate of the BBQ or into a preheated griddle or frying pan and cook for about 3 minutes each side or until cooked through.
- Remove from heat and rest in a warm place. Place one tortilla on a flat surface, lay two chicken tenderloins in the centre, top with a little shredded lettuce, diced tomato, avocado, salsa sauce and jalapenos if your using them.
- Fold the bottom ¼ of the tortilla over the filling then turn ¼ and roll the tortilla to secure the filling.
Serve warm or cold. Makes 4.
